Roasted Potatoes, Leeks and Cabbage

Here’s a recipe that transforms ordinary cabbage to extraordinary cuisine.

1 head green cabbage, about 1 1/2 lbs.

1 1/2 lbs. baby red potatoes, halved

2 leeks, white and light green parts only, sliced, about 3 cups

2 Tbs. olive oil

1 Tbs. butter, melted

3/4 tsp. caraway seeds

1/2 tsp. salt

chopped fresh parsley, optional

Preheat oven to 400 degrees. Line jellyroll pan with foil. Halve cabbage; cut each half into 6 wedges.

In bowl, combine, cabbage, potatoes, leeks, oil, butter, seeds and salt; toss gently until coated. Spread in jellyroll pan.

Roast, gently stirring twice, until potatoes are golden brown and vegetables are tender, about 35 minutes. If desired, serve sprinkled with parsley.

Serves 8

Pong’s Oriental Delights

Sushi done properly is an art, and Big Bear’s DaVinci when it comes to fresh sushi is Pong Neatherlin, of Pong’s Oriental Delights.

Every roll is made fresh to order at Pong’s, where sushi has virtually overtaken her regular Tokyo-Bangkok cuisine in popularity. It is no surprise either; sashimi, sushi, hand rolls or even special deep fried rolls all have one thing in common—they’re extremely fresh and flavorful, made by hand on the spot.

Pong can be seen hand-slicing whole avocados, and delicately carving shrimp and other seafood as if she was painting a tapestry. Since Pong herself prepares everything, the quality is always high on all that she serves. Rolls are crunchy and flavorful with perfect texture and taste, with several to choose from, a couple dozen at least, plus fresh sashimi and sushi too. It can be difficult to choose but once you do it is well worth it.

Pong’s is at 42104 Big Bear Blvd. Open daily except Tuesday’s. Go check it out it is well worth it.
