This is a great salad to go with your Irish meal. Refreshing crisp bacon and apple paired with cheese, dill and red onion! Use a cookie cutter to make the Cheddar shamrocks.
Ingredients:
4 bacon slices, cut into 1″ pieces
4 0z. rectangular chunk cheddar cheese, halved
1/4 C. olive oil
2 Tbs. white vinegar
2 Tbs. chopped fresh dill
2 Tbs. finely chopped red onion
1 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
1 head green leaf lettuce, 12 oz., torn, 8 Cups.
1 Gala apple, cored, cut into 1/2″ wedges
In large nonstick skillet over medium-high heat, cook bacon, stirring frequently, until crisp, 8-10 minutes. Drain on paper towels.
Cut cheese into 1/4″ thick slices. Using 1 1/2 shamrock-shaped cookie cutter, cut out 16 shamrocks.
In large bowl, whisk oil, vinegar, dill, onion, sugar, salt and pepper. Add lettuce, apple and bacon; toss to coat with dressing. Add shamrocks; toss gently.
