Poinsettias (Euphorbia pulcherrima) remain one of the most popular holiday flowers. Hybridizers have expanded the range of colors from the familiar red to pastel yellow and vibrant bi-colors. One of the most common questions after Christmas is “How can I care for my poinsettia so that it will bloom again next Christmas?”. While this can be done, it’s a very fussy, exacting process and since the plants are not that expensive, you might just choose to start fresh next year.

For those of you who are undaunted, the process for saving your poinsettia and getting it to rebloom begins with the care you give it the first season.

Aunt Trina’s Ham Pie

Here is our favorite Ham recipe for this winter.

Serves: 6
Cook Time: 1 Hour

Ingredients

  • For Pastry Crust:
  • 2 cups all purpose flour
  • 3 tablespoons vegetable shortening, chilled
  • 1 egg, slightly beaten
  • 2 tablespoons sugar
  • 1/2 teaspoon dry yeast
  • 1/2 cup milk
  • (Can also substitute a store-bought double pie crust)
  • Filling:
  • 1 cup Smithfield Ham,chopped
  • 5 eggs
  • 1/3 cup Swiss cheese, grated
  • 1/2 cup ricotta cheese
  • 2 tablespoons parsley, chopped
  • 1 tablespoon chives, chopped
  • 1/4 teaspoon pepper
  • For Egg Wash:
  • Whisk together 1 egg and 1 teaspoon milk

 

Steps

If you opt for frozen store-bought crusts, set them out to thaw according to the package instructions. To make your own crust, start by dissolving the yeast in warm milk and sugar. Set aside for a few minutes until the mixture begins forming bubbles. Add the egg and set aside. Cut the vegetable shortening into the flour using your fingers or a pastry cutter. Add the liquid mixture to flour and blend. Divide the dough into two pieces to fit your pie dish.

Preheat oven to 350 degrees F.

To make the filling, begin by beating the eggs in a large mixing bowl. Add in the cheeses, ham, parsley, chives and pepper. Stir until combined.

Line the bottom of a pie plate with one crust, leaving about an inch overhang. Fill the pie crust with the ham and egg mixture. Cover with the remaining crust. Decoratively crimp the edges and cut slits in the top for steam to escape. Brush with egg wash and place in the oven for approximately 1 hour or until a knife comes out clean. Remove from oven and allow to cool. Serve slightly warm.

Happiness Statistics

Psychologists have been studying happiness lately.  Since happiness can’t be measure directly they have to take surveys.   To make their studies more credible they take a lot of surveys and apply statistics.   But here is the thing statisticians will tell you.  Correlation does not mean causation.

From all these surveys on happiness psychologists concluded that there are a number of habits or activities that happy people do.  Their conclusion is that if you practice these habits or actions you can raise your level of happiness to be as happy as them. These activities include things like practicing gratitude, having a close social circle, gardening, and giving to the community.

But what if the correlation is from the opposite direction.  Perhaps those happy people have a lot of love to share.  What if the emotion of love coming out of them is so great that they have to share it in some way?  Out of that need to express their love they build close social circles, engage in activities and with communities in a way of sharing the love coming out of them.

If your love coming out of you is so strong you will find channels to express that love through social circles, activities like gardening, and caring for your community.

It is the emotion of love that will drive your activities,,, not the activities that that will change your emotion to happiness.
