Avocado Mango Chicken Leftovers

Ok so I know you just had to try my Avocado Mango chicken, and I’m sure there is leftover chicken and probably some of that salsa too.

Mine was SO yummy that I just couldn’t throw it away. So here’s what I did with mine, I’m not sure which was better the hot chicken with the mango salsa served over the top, or this delicious salad that I made.

I guess you’ll have to decide for yourself, after you try them both!

I just chopped up the leftover chicken and mixed it with the salsa. I cut some romaine lettuce and I happened to have some seedless grapes. I tossed the lettuce with the grapes and added the chicken salsa mixture.

You can add what ever you think might be good, I’m going to add some Pine Nuts the next time I make it or even some garbanzo beans, make it your own do what you want, just make sure you have a great dinner with your family.

Greek Tossed Pasta Salad

Here is a great pasta salad perfect for summer. Super easy to make and incredibly yummy!

 

Here’s what you’ll need:

  • 1 box of Suddenly salad
  • ¼ cup water
  • 3 Tbls. Vegetable oil
  • 4 cups of torn romaine lettuce2
  • 2 medium tomatoes – coarsely chopped (about 1 ½ cups)
  • 1 small Cucumber – coarsely chopped (about 1 cup)
  • ½ cup of thinly slices red onion
  • 4 oz. of crumbled feta cheese (about 1 cup)
  • 1 can (2 ¼ oz) of sliced olives – drained

Here’s how you make it:

  •  
    1. Empty pasta mix into boiling water. Gently boil uncover for about 12 minutes or until tender.
    2. Drain pasta, rinse, shake and drain well
    3. In a large bowl stir together seasoning mix (from pasta salad box) oil, water and pasta. Stir in the rest of the ingredients
    4.  Top with croutons and parmesan cheese
    5. Serve or refrigerate right away

Camping…why not have an INDOOR Campout?!

This is a super easy and inexpensive way to give the kids the feel of camping right in your own back yard, from the comfort of your own home or one of our gorgeous rental cabins!

First and most important, the tent. Just a small pop tent is needed, but you will also need a few sleeping bags or if you don’t have any some pillows and blankets will work just the same. A fire is nice touch but again not needed to have a great time! Fireplaces work well for a campfire effect.

For dinner have a BBQ, make some hamburgers for the bigger kids (or adults as may choose to call ‘em) and maybe some hot dogs for the littler ones. After dinner for some definite fun and probably the most important food part of camping are…the S’mores! Now,  like I said a campfire is not needed for this special recipe, your oven is going to do the job! 

You should start preparing the s’mores before dinner so they are ready to grab right after.
Here’s the list of items you will need:
• 8 cups – Golden Grams or Cinnamon Grahams cereal
• 5 cups – miniature marshmallows
• 1 ½ cups – Chocolate Chips
• ¼ cup – light corn syrup
• 5 Tbls. – butter or margarine
• 1 Teas. – Vanilla
• 1 cup miniature marshmallows, if desired

Here’s what you need to do:
• Butter 13×9-inch pan. Into large bowl, measure cereal, if you spray your bowl with cooking spray before using it, you’ll have less mess to clean when you’re done. In 3-quart saucepan, heat 5 cups marshmallows, the chocolate chips, corn syrup and butter over low heat, stirring occasionally, until melted; remove from heat. Stir in vanilla.
• Pour over cereal; quickly toss until completely coated. Stir in 1 cup marshmallows
• Press mixture evenly in pan, using buttered back of spoon. Let stand uncovered at least 1 hour, or refrigerate if you prefer a firmer bar. For bars, cut into 6 rows by 4 rows. Store loosely covered at room temperature up to 2 days.
High Altitude (3500-6500 ft): No change.
Make it Easier with this variation
• Instead of using the stovetop, microwave 5 cups marshmallows, the chocolate chips, corn syrup and butter uncovered in large microwavable bowl on High 2 minutes to 3 minutes 30 seconds, stirring after every minute, until melted and smooth when stirred. Stir in vanilla. Continue as directed in recipe.

As you grab those tasty S’more bars, you should delight in telling scary ghost tales, girly fairy tales or do a “story round” where the first person starts the story, the next person will continue it and each person adds a little more just a line or two, until you come to the end!

Potato Salad Recipe..

Let’s Face it, our budgets are tight so here is a recipe that you may enjoy and find useful. Please enjoy!!!

I don’t know about you, but I was raised seeing potato salad: My grandmother’s and mother’s. You know how we can be– very particular about whose potato salad we eat.

Whether it was potato salad or another side dish— potato salad was always an available option at every meal.

So here is my recipe to you all!!!

Classic Potato Salad

Ingredients:

4 lbs of white potatoes (your choice : Russet, Idaho, Yukon gold)

8 large eggs, boiled

1 large onion, diced

1 small green pepper, diced

1 cup of sweet relish

2 cups of mayonnaise

1 tablespoon of yellow mustard

2 teaspoons of sea salt

1 teaspoon of garlic powder

1 teaspoon of pepper

A sprinkle of Paprika

Directions:

Peel and cube potatoes into one inch cubes. Place in a large pot with cold water and cook until tender but not to soft (approx. 20 minutes or so), keep checking depending upon potato used. While potatoes are cooking, peel and chop boiled eggs, add to bowl with onion,green peppers,relish,mayo, and mustard. Mix well together. After potatoes are done, drain them, and allow them to cool completely. Once potatoes are cooled, sprinkle with each salt and pepper, and garlic powder, coating all potatoes. Now fold in egg and mayo mixture until well blended. Place in a serving bowl, sprinkle top with paprika and refrigerate.

Our Gold Rush Owners Shindig!

Well, we just finished our big event!  I finally got to meet some of the owners that I talk to on the phone!  What a great group of  owners we have!

We had some of the best BBQ-tri-tip and chicken Shane could muster!  Great salads and desserts!

We panned for gold…and BB’s as well as had a Dutch Oven demo!  Some folks have asked for the recipe, so here is the

DUMP CAKE DUTCH OVEN RECIPE…

Ingredients:

1  29 oz. can of sliced peaches

one small can of crushed pineapple

1 box of yellow cake mix (just dry)

2 Tablespoons butter

Dump the peaches and pineapple into a Dutch Oven and mix.  Dump the cake mix evenly on top of the fruit.

Drop pieces of butter over the top of the cake mix.  Using 16 coals on the top and 12 coals under the Dutch oven, cook for about 40 minutes or until brown. Be sure to occasionally rotate the Dutch oven to avoid scorching in one area.  Serve warm, right out of the oven

(You can make this in a conventional over in a rectangular baking pan at 350 degrees for 40 minutes.)

Make Your Own Irish Cream Liqueur

If you’ve ever tasted Bailey’s cream liqueur you already know how delicious and decadent it is, do you think your friends would be impressed if you made your own from scratch?

Try this simple recipe for some of your own smashing Irish Cream Liqueur.

1/2 C. honey

1 C. heavy cream

1 1/2 C. Irish Whiskey

1/2 teaspoon instant coffee

Combine all ingredients, mix well and store in the refrigerator.

Make at least 3-4 days before serving, giving the container a shake a couple of times a day.

Make sure you consume within 2 weeks.

Mustard-Crusted Corned Beef

After simmering in a tangy-sweet sauce, this corned beef gets extra flavor from a buttery cracker-crumb topping!

Ingredients:

4 lb. corned beef brisket

1 C. apple cider vinegar

1 C. packed light brown sugar

4 bay leaves

20 Ritz crackers, crushed, 3/4 cup

2 Tbs. butter, at room temperature

2 Tbs. spicy brown mustard

2 Tbs. chopped fresh parsley

Place corned beef in large pot. Whisk together vinegar and sugar; pour over beef. Add bay leaves and enough water to cover by 1″. Over high heat, bring to boil; skim foam from top and discard. Cover; reduce heat to low. Simmer, turning every 30 minutes,until meat is very tender, about 3 hours.

Preheat oven to 400 degrees. Drain beef; pat dry. Place in small roasting pan. In bowl, combine crackers, butter, mustard and parsley; spread mixture over top of beef. Roast 8-10 minutes or until crumbs are golden.

Let stand 10 minutes before slicing.

Serves 10

Leprechaun’s Favorite Green Shake

Are you looking for a tasty St. Patrick’s Day treat? I’ve got the perfect thing to satisfy you pallet this holiday.

It’s the leprechaun’s favorite green shake.

What you need to do, is get

Mint chocolate chip ice cream

Vanilla ice cream, take a couple scoops of each and put into a blender,

Add milk (whole milk works the best for thickness) covering about half of the ice cream,

Add chocolate syrup, a two second squeeze and blend.

If shake is too thick, add more milk as needed.

This should make two to four servings, depending on the size of your glass, but be on the lookout for those leprechaun’s, they go after those green shakes like gold.
