Aunt Trina’s Ham Pie

Tuesday, December 21st, 2010

Here is our favorite Ham recipe for this winter.

Serves: 6
Cook Time: 1 Hour

Ingredients

  • For Pastry Crust:
  • 2 cups all purpose flour
  • 3 tablespoons vegetable shortening, chilled
  • 1 egg, slightly beaten
  • 2 tablespoons sugar
  • 1/2 teaspoon dry yeast
  • 1/2 cup milk
  • (Can also substitute a store-bought double pie crust)
  • Filling:
  • 1 cup Smithfield Ham,chopped
  • 5 eggs
  • 1/3 cup Swiss cheese, grated
  • 1/2 cup ricotta cheese
  • 2 tablespoons parsley, chopped
  • 1 tablespoon chives, chopped
  • 1/4 teaspoon pepper
  • For Egg Wash:
  • Whisk together 1 egg and 1 teaspoon milk

Steps

If you opt for frozen store-bought crusts, set them out to thaw according to the package instructions. To make your own crust, start by dissolving the yeast in warm milk and sugar. Set aside for a few minutes until the mixture begins forming bubbles. Add the egg and set aside. Cut the vegetable shortening into the flour using your fingers or a pastry cutter. Add the liquid mixture to flour and blend. Divide the dough into two pieces to fit your pie dish.

Preheat oven to 350 degrees F.

To make the filling, begin by beating the eggs in a large mixing bowl. Add in the cheeses, ham, parsley, chives and pepper. Stir until combined.

Line the bottom of a pie plate with one crust, leaving about an inch overhang. Fill the pie crust with the ham and egg mixture. Cover with the remaining crust. Decoratively crimp the edges and cut slits in the top for steam to escape. Brush with egg wash and place in the oven for approximately 1 hour or until a knife comes out clean. Remove from oven and allow to cool. Serve slightly warm.

Make your next trip to Big Bear the best ever! Dont forget our many promotions on Facebook.

MOUNTAIN ROAD DRIVING TIP #1

Tuesday, November 9th, 2010

Make sure that your brakes, windshield wipers, defroster, heater, and exhaust systems are in good condition. Ensure that your brake and transmission fluids are filled and have been changed within the interval recommended for your vehicle. Brake fluid, as it ages, takes on moisture and contaminants that lowers its boiling level. Frequent brake use can overheat the fluid and you can lose braking efficiency when it is most needed. Also check the tread on your tires and ensure that they are properly inflated. Lets get you here safe and sound!
